Though the striking château greets you arriving at the estate in Margaux, it’s what’s happening under the vines that gets winemaker Gonzague Lurton out of bed each morning. A third-generation winemaker, Gonzague is a pioneer of organic and biodynamic farming and is always in search of new ways to encourage microbiological life in his soil.
