Studying wine from afar wasn't enough for Olivier. He left his native Canada and followed his curiosity to the winemaking action in Bordeaux, where he became an expert in the region's wine and gastronomy. He not only knows Bordeaux's top winemakers, he can also tell you about the up-and-coming stars. Olivier is currently based in London.

What's the one wine you would bring to a deserted island and why?
I would need a wine that pairs with seafood and that brings delight at every moment. Without a doubt, that would be Champagne Jacques Lassaigne Le Cotet Blanc de Blancs. I could drink that wine forever.
What made you change your career to go into wine?
I was ready for a change in my mid-20s. I thought, “If I’m going to spend 8 to 10 hours a day doing something, it should be something that genuinely interests me.” So I followed my calling to study wine in Europe. It was the best decision I ever made.
